José Javier Menéndez was born in Madrid, Spain—as evidenced by his love of Callos (tripe) a la Madrileña. He is a third generation chef, following in the footsteps of his father, mother and grandfather and grew up in a restaurant kitchen. Chef José joined ICC in 2013 and is the Lead Chef Instructor for the Spanish Culinary Arts program. He’s a veteran of Michael’s Restaurant, served as a personal chef to Placido Domingo and has worked with José Andrés. He finds passing his knowledge and experience to the next generation of chefs the most rewarding part of his career. He advises aspiring students to find success by loving what they do every day.
