Pastry Arts Programs

Professional Pastry Arts: Be on the road to a career as a pastry chef, cake designer, baker, chocolatier, sugar artist or more in as little as six months. Our chef-instructors teach you the necessary skills to becoming a well-rounded pastry pro, including advanced techniques like chocolate tempering and pulling hot sugar into delicate flowers. Upon program completion, you receive a Grand Diplome, representing you have proven discipline, knowledge and artistry through a curriculum developed with ICC dean and world-famous Jacques Torres. NY students have the rare opportunity to intern at Chef Torres’ chocolate businesses as part of their education.

Cake Techniques & Design: If tiered cake masterpieces are your passion, ICC’s Cake Techniques & Design course is for you. Learn the essentials of cake baking, filling, advanced design and the business aspects of the industry. Our curriculum, created with input from cake maestro and TV personality Chef Ron Ben-Israel, takes you through four unique levels of cake baking and design.

Art of International Bread Baking: ICC has the only accredited professional bread baking program in the United States. The course is divided into four units and takes you through classic French, traditional Italian, German and Middle European breads. Over the eight weeks, you will learn to bake an array of breads from global origins, understanding the chemistry, ingredients and techniques needed to consistently achieve excellent results.
