In 100 fast-paced hours at ICC, you’ll advance from basic knife skills to more complex, classic recipes, including how to make the game-changing five “mother sauces”:  velouté, Espagnole, hollandaise, béchamel and tomato, Whether you choose day or evening classes, this delicious experience will change the way you cook and think about food.

WHAT YOU’LL LEARN

In day or evening classes, you’ll learn from the same accomplished chef-instructors who teach our career students and enjoy the same pristine kitchens. As you become immersed in the course and touch on more advanced cooking techniques, terminology will become second language, precision knife work your trusted skill.

This program incorporates many of the 250 essential skills introduced in ICC’s career program, Professional Culinary Arts, including the culinary techniques of preparing stocks and sauces, cooking meat, fish and vegetables and executing classic recipes. And if you’re inspired to go further, Culinary Techniques may allow you to enter our Professional Culinary Arts career course with advanced standing.*

*Graduates of Culinary Techniques may be eligible to receive advanced standing in the Professional Culinary Arts career program by bypassing Level 1 (Introduction to Basic Techniques). Advanced standing students benefit from a reduced tuition and an accelerated program. For information, speak to an admission representative.

LEARN THE BASICS:

Learn Knife Skills:
Learn which knives are best for which jobs, and proper care for them. Through tailiage (cutting vegetables into even sizes and shapes), you’ll learn different techniques, such as émincer (thin slice), batonnet (small sticks), brunoise (small dice) and paysanne(tile-shaped).

Stocks and Sauces:
Learn how to combine humble ingredients, such as bones from chicken, beef, veal or fish, with aromatic vegetables and herbs to create brown, white, fish, marmite and vegetable stocks—and how to marry stocks with binding elements, such as starches and proteins, to create the five “mother” sauces: velouté, Espagnole, hollandaise, béchamel and tomato, as well many of their derivatives.

Food Safety:
General rules of hygiene as well as comprehensive food handling and safety issues for a kitchen environment.

Ingredient Identification and Classification:
Use all your senses as you identify and classify a wide range of proteins, vegetables, starches, grains, herbs and spices.

This intensive course is, quite simply, paradise for chocolate lovers. Inspired by ICC’s proven Total ImmersionSM training method, this intensive, hands-on course on the art of chocolate was developed to deliver a wide range of skills in a manageable amount of time, and gives students access to the same modern facilities and accomplished chef-instructors who have made ICC so renowned.

Each class begins with a brief discussion of the science, theory and techniques behind chocolate, but the majority of your time will be spent in the kitchen doing, not watching. You’ll learn:

Introduction to Cake Decorating

Creating a three-tiered cake is no easy feat. Cake construction and decorating requires being an adept baker, and knowing the finer points of piping and sugar paste work. In this 5-day, hands-on cake course, you’ll gain these skills and more, plus you’ll learn from some of New York City’s best cake designers.

WHAT YOU’LL LEARN

Designed to take the skills of any baker to the next level, you’ll learn the basic principles of cake, frostings and cake construction, and then apply them to assemble a three-tier masterpiece of your own, embellished with simple and complex techniques using rolled fondant and royal icing.

Each class begins with a brief discussion of recipes and techniques. Then, you’ll roll up your sleeves and get to work, learning how to:

  • Prepare classic white cake and Swiss buttercream
  • Construct and use paper cornets to decorate with piped royal icing
  • Create rosettes, shells, snails, and more
  • Apply rolled fondant for cake covering, bands, bows, quilting, molding, cut-outs and crimping
  • Assemble cake layers and stack cakes with dowels

Get ready to channel your inner bread baker: this inspiring class will teach you the proper mixing, kneading and professional bread baking techniques to make breads from around the world.

Breathe in the aroma of freshly baked loaves and realize your dough-making dreams in this ICC course devoted to the art of producing beautiful baguettes, fresh focaccia, crusty ciabatta and braided challah, to name a few of the artisanal breads in the curriculum. Choose to take the five sessions in a one-week immersion by day, or spread over three weeks in the evenings, depending on your schedule.

Come to class each day, slip on your baker’s whites and get ready to mix, ferment, fold, shape, score, finish and bake. Even if you have no prior experience making bread, you’ll discover the joy of baking and unleash its mysteries, while learning techniques for a spectrum of tastes and textures. Under the close supervision of ICC’s accomplished chef-instructors, you’ll be challenged to learn more about professional bread baking than you ever thought possible.

Cooking the New Delicious

WHAT YOU’LL LEARN

Learn culinary techniques for cooking the bounty of the season!

You’ll learn how to use all the products you are working with, whether it’s roots, tubers, apples, pears and hardy greens in the colder months; asparagus, peas and strawberries in the spring; or corn, zucchini, tomatoes and peaches in the warmer months.

This class will not just teach you recipes—it will change the way you look at ingredients, as you use techniques to transform and deconstruct each seasonal ingredient into delicious dishes.  (You may never discard those apple peels or celery root tops again!)

Winter Menu:

  • Bitter Greens with Bacon Lardons, Roasted Root Vegetables and Oregano-Mint Vinaigrette
  • Seared Hanger Steak and Pommes Fondant Grand Mère with a Veal Reduction
  • Roasted Pineapple with Piment d’Espelette, Pumpkin Seed Granola and Cinnamon Crème Anglaise

WHAT YOU’LL LEARN

Enjoy a Saturday afternoon opening up the world of wine in a lively and rewarding fashion.  We’ll outline wine-making traditions of the Old World and compare this sensibility with the extroverted can-do attitude of New World oenology. Learn to describe wine – wine as a second language! Then we’ll taste, talk and decide on our preferences. We’re on our own personal learning curves. Take the three hour hike on yours, the view is great!

Students must be at least 21 years of age to enroll in this course.

Warning: This culinary class may not be for the faint of nose. In just four hours, you’ll acquire skills to properly match spices with dishes—not always an easy task, especially if a recipe calls for exotic international spices that you’ve never used.

Indulge your senses in a hands-on experience, with exotic spices from around the world. Learn how to maximize flavor and prepare spice combinations. You’ll cook (and eat!) a three-course meal that shows how the right spices can make even your regular dinner routine irresistible.
