Ashley Rath is the Executive Chef at LaLou in Prospect Heights, a wine bar deemed “One of the hottest spots to eat and drink in Brooklyn,” by Eater NY just weeks after its June 2019 opening. Rath, a Syracuse native, initially set out to do non-profit work, but through a series of – ultimately serendipitous – events, ended up in New York City cooking at a midtown restaurant. The fast-paced, detail-oriented environment suited her well, and the chef whites stuck. Her first entry into the fine dining world was a line cook position at Atera, the two Michelin star Tribeca tasting menu restaurant run by chef Matthew Lightner; it was followed by two years at beloved seasonal American restaurant Gramercy Tavern, where she worked closely alongside chef Michael Anthony. In 2014, she joined Major Food Group and was part of the opening teams for their restaurants Santina, Dirty French, and most notably, The Grill. Rath spent a year developing dishes for the high profile revamp of The Grill at the renowned Seagram Building, and served as opening Chef de Cuisine. While at The Grill, New York Times critic Pete Wells awarded the restaurant three stars. Now at LaLou in Brooklyn, Rath draws on the sum of her experiences cooking at NYC restaurant institutions to deliver refined wine bar fare.
