ADMISSION & WELCOME CENTER
The best way to learn about The International Culinary Center is to see it in person, and our Admission & Welcome Center make your visit to the Big Apple a piece of cake. One phone call to our concierge service is all it takes. We’ll handle all your travel arrangements — airline tickets, hotel reservations, transportation in New York City, even dinner reservations and Broadway show tickets — and, if possible, arrange a package deal to save you money.

Tours of our renowned gourmet cooking and baking school are available six days a week, Monday through Saturday. You’ll meet with an Admissions representative and a Financial Aid Advisor, tour school facilities, dine in our renowned on-campus restaurant, L’Ecole, audit a culinary class, and get a first-hand sense of the energy and passion our faculty and students bring to our culinary arts center. Only by seeing, touching — and, of course, tasting — what our school has to offer can you fully appreciate the opportunity that awaits.

ITALIAN STUDIES
Our school's brand new facilities — designed specifically for aspiring and established Italian cooks — were created to be the ultimate culinary program to unleash your passion for Italian cuisine. Whether you’re preparing fresh tortellini or agnolotti, creating a robust and flavorful zuppa di faro, or putting the finishing touch on a mouth-watering gelato, our Italian Studies courses provide you with all the tools and equipment you need. The kitchen features a brick-lined, custom-made pizza oven, stainless steel work tables, authentic Italian marble in the chef’s station, and an adjacent classroom and private dining area for cooking classes, tastings, critiques, and events. As in all our kitchens, the equipment is similar to what you will find in the finest commercial kitchens. Using the latest model Jade ranges, Vulcan Swiss kettles, Hobart ovens and mixers, and other high-end gourmet cooking and baking equipment, you sharpen your proficiency on the industry’s finest machines as you hone your repertoire of cuisine from every region of Italy. The setting couldn’t be more perfect for the innovative culinary course curriculum beautifully conceived by our Dean of Italian Studies, Cesare Casella. No other school, academy, or culinary arts college in the world combines world-class facilities with an immersion in the food, culture, and language of Italy so completely.

Our fourth floor Italian Studies kitchen is home to The Italian Culinary Experience, Dean Casella’s signature culinary program that combines the unrivaled excellence of our New York City courses with eighteen unforgettable weeks in Italy, including real-world culinary arts vocational training at top Italian restaurants. The impeccable facilities are also used by our students of our unique “à la carte” Italian cooking course, Essentials of Italian Cooking.

THE FCI CULINARY KITCHENS
One way we ensure that you learn faster and go farther than you ever thought possible is by training all of our students on the same equipment used in today’s commercial kitchens. Our fourth floor FCI culinary kitchens are completely new and outfitted with the same equipment currently in use by the finest restaurants in the world. So, when you leave our gourmet cooking school and enter this fast-paced, extremely competitive industry, you’ll feel right at home with Jade ranges, Vulcan Swiss kettles, and dozens of other top-tier machines that professionals rely on every day. Plus, all of our gourmet cooking classes are designed to provide each student with their own personal work station. That means you start cooking on day one, and you never have to wait for equipment. This unusually generous access to the finest facilities is the foundation for the Total ImmersionSM training method that has made The French Culinary Institute at the International Culinary Center one of the most revered culinary schools in the world, setting us uniquely apart from other traditional culinary arts colleges or degree programs.

The fourth floor French Culinary Institute kitchen is the site of our Classic Culinary Arts program, which teaches the 250 fundamentals that are the building blocks for all Western cuisine. It is also the home of our Amateur recreational cooking classes, including Essentials of Fine Cooking, Culinary Techniques + Advanced Culinary Techniques, and Food & Wine Pairing. And, for students looking for a truly bite-size culinary course, try Tapas Essentials, one of our school's exciting new gourmet exciting new Amateur Classes for gourmets.

THE FCI PASTRY KITCHEN
Nowhere is it more essential to have precise equipment than in a pastry kitchen, where it takes the perfect touch to create a true masterpiece. The fourth floor pastry kitchen has it all. From brand new Hobart mixers to Winkler Wachtel ovens, our pastry and baking program teaches the art of pastry making as it should be learned — with good tools and experienced Chef-Instructors. As in all of our instructional kitchens, our baking classes provide your own personal work station for the duration of your class, so that every possible moment of class can be spent mixing, rolling, shaping, and baking.

Our fourth floor pastry kitchen is home to both our career courses, Classic Pastry Arts, and our Amateur recreational cooking classes, including Pastry Techniques, and two of our exciting new gourmet exciting new Amateur Classes for gourmets— Chocolate Truffles, Bonbons & More and Fondant and Royal Icing.
