In the last third of their culinary arts vocational training, our students of the Classic Culinary Arts step boldly onto center stage by cooking at all six stations of our renowned restaurant, L’Ecole. A grueling and thrilling real-world culinary experience typical of The International Culinary Center’s Total ImmersionSM method, your time at L’Ecole is where your culinary training fuses with your ability and instincts, and you realize — perhaps for the first time — that you are a chef. And quite a skilled one, at that. In the immensely competitive New York City restaurant scene, L’Ecole and its student chefs earned a 24 from the Zagat® Survey and was recently among the elite rated by the Michelin® Guide, two of the most respected restaurant guides in the world.
THE FRENCH CULINARY INSTITUTE’S CULINARY KITCHENS
Our instructional kitchens feature the same equipment you’ll find in the most advanced commercial kitchens. Millions of dollars go into ensuring you have the right tools, providing cutting-edge facilities that are unmatched by most other traditional culinary arts degree programs. You’ll train on elite equipment like Jade ranges, Hobart ovens and mixers, and Vulcan Swiss kettles, just to name a few.
The first floor French Culinary Institute kitchens are home to our career programs, including Classic Culinary Arts, offering comprehensive culinary arts vocational training in the fundamentals of French technique that are the building blocks of all Western cuisine. Once you have mastered these fundamentals, our gourmet cooking school will prepare you to join the culinary world at its highest level, whether you choose French cuisine as your specialty or — like FCI graduates Bobby Flay, Wylie Dufresne, and countless others — you decide to soar in another area of expertise. The course is offered as a 6-month day program or a 9-month evening culinary program.
