Designed and overseen by acclaimed author, chef, and our Dean of Italian Studies Cesare Casella—and following the popular Total ImmersionSM approach to learning that has made The French Culinary Institute such a success—Italian Studies at The International Culinary Center offers aspiring Italian cooks the most authentic and well-rounded training available on either side of the Atlantic.

The International Culinary Center—in the heart of New York City’s SoHo and just steps from Little Italy—offers unlimited opportunities to immerse yourself in everything Italian and food-related both in and out of class . Master the skills, techniques, and classic recipes necessary to hone a repertoire of cuisine from every region of Italy while working side-by-side with distinguished Chef-Instructors in a new custom-designed Italian kitchen—replete with brick-lined, custom-made pizza oven, stainless steel work tables, Italian-marbled chef’s station, and the industry’s finest equipment.

Students can opt to train on both sides of the Atlantic in the 29-week Italian Culinary Experience. This one-of-a-kind program includes Italian language classes, rigorous training in the kitchens of the International Culinary Center and ALMA, The International School of Italian Cuisine in Parma, Italy, and a chance to hone new skills even further in the kitchen of one of Italy’s top restaurants.

Students who want to get an Italian immersion without a passport—and in smaller bites—can do so in Essentials of Italian Cooking 1, 2 and 3. Each unique 8-session course focuses on a different set of skills and dishes—from antipasti, soups, stocks, sauces, pastas, pizza, fish, shellfish, poultry, and game, to an array of exquisite Italian pastries.
