Spanning several months of training, our Italian Culinary Experience provides aspiring chefs with Total ImmersionSM in both Italian culture and cuisine. With an innovative curriculum that divides your Italian cooking class sessions between New York City and Parma, Italy, this is quite possibly the most well-rounded program in Italian cuisine ever created.

Totaling 40 hours this course offering is an easy way to fit an Italian cooking class into a busy schedule, yet still provide comprehensive, expert instruction in Italian cuisine.

More than just an Italian cooking class, The Italian Culinary Experience from The FCI is truly the most unique program of its kind. Featuring on-site training in Parma, Italy, this innovative class takes our Total ImmersionSM methodology to an entire new level. When you're through with this course, you'll be able to do more than effortlessly fix your favorite Italian pastry, dessert, or entree - you'll also gain an intrinsic understanding and appreciation of Italian cuisine, culture, and language as a whole.
Your culinary journey begins with an Italian cooking class with our Chef-Instructors in New York City on all the fundamentals of Italian cuisine. This 10-week Italian cooking class kicks off with a week-long intensive on Italian language and culture, providing an essential foundation that will continue to be reinforced throughout the entire program. After you've been briefed in cultural and language basics, then you're off for nine more weeks of in-depth training in the basics of Italian cuisine, including:
- Italian cheese & antipasti
- Stocks & sauces
- Pasta - dried, fresh, and filled
- Pizza and flatbreads
- Meats - chicken, duck, beef, lamb, and more
- Contorni/side dishes - vegetables, greens, and salads
- Italian dessert specialties
- Italian pastry
Your ten-week introductory Italian cooking class in New York ends with a practical review and final exam.
Next up is our exciting nine-week training session in Parma, Italy with ALMA, the International School of Italian Cuisine. Led by the renowned Gualtiero Marchesi (a multi award-winning chef and international expert on Italian cuisine), ALMA provides world-class teaching and cooking facilities with the expert guidance of experienced Italian Chef-Instructors. There is truly no better way to jump-start your expertise in both Italian cuisine and culture than to work side-by-side in Italy with true experts in the field, featuring live demonstrations from starred Michelin® chefs. These hands-on Italian cooking class sessions will allow you to become intimately familiar with everything from regional wines, products, and food-handling methods to the intricacies of Italian pastry. And don't forget fabulous field trips that include visits to wineries, olive oil mills, the truffle museum at Alba, and more.
After your in-school training, you will be placed in a selected restaurant for an additional nine weeks, applying skills assimilated in New York and Italy to a "real life" situation where you can learn by doing. This exciting Italian cooking class program ends with a final week back in New York, where you'll be briefed in kitchen management, demonstrate your cooking skills for others, and take a final practical exam.
