Are you a teen who dreams of working in a professional kitchen, or you just love the idea of developing your sweet skills? Consider attending one of ICC’S Pastry Camps for Teens to begin developing or enhancing your pastry skill set. Teen students (13-18 years old) will be taught various pastry techniques by the same instructors who train our adult pastry career students. After the week-long course, you will be equipped with the skills needed to navigate the kitchen.
DAY 1 BREAKFAST DAY
Jump right in with the most important meal of the day. You’ll learn methods for creaming and cutting in butter as well as how to use chemical and organic leavening agents to get the best rise.
DAY 2 TART DAY
Learn the methods to create beautiful tarts with delicious crusts and fillings.
DAY 3 CUPCAKE DAY
You’ll create stunning cupcakes using your skill and imagination. Learn about meringues, buttercreams and decorating techniques with fondant, marzipan and chocolate.
DAY 4 PÂTE À CHOUX DAY
Learn one of the building blocks of classic French pastry, pâte à choux, as well as different kinds of custards. Perform piping to decorate and enhance your creations.
DAY 5 “ICE CREAM SOCIAL”
This day’s lesson includes how to properly batch freeze custards for ice cream, individual dessert plating as well as a variety of dessert sauces and cookies. Work in teams to develop components for an “ice cream social,” which includes ice cream and sorbets, sauces and toppings.
