The incredible, versatile puff pastry

Rich, flaky, and light, puff pastry is used in a wide variety of both savory and sweet applications. It's an easy dough to make, but getting the technique just right is crucial. In this class, you will learn what a détrempe and beurrage are and how to make both a book and letter turn, as well as the important mixing, rolling, baking methods to follow in order to achieve those beautiful, light-as-air layers.

After making your dough, you'll learn how to turn it into an assortment of delicious pastries, including cheese straws, palmiers, napoleons, and more. With an understanding of puff pastry basics, you'll be able to take on many classic French desserts, as well as create a few of your own. You can stack it, fill it, or flavor it with almost anything you can think up. With puff pastry at your fingertips, consider yourself a pastry chef in the making.
