In the Essentials of Italian Cooking, your intensive hands-on experience begins on day one, and the fast-paced learning and excitement never let up. Under the watchful eye of your expert chef-instructors, you’ll learn to craft wonderful sauces, produce authentic, fresh pizzas and pastas by hand, and become skilled at cooking a variety of traditional, iconic dishes that include veal, pork, fish, and vegetables.

Following The International Culinary Center’s trademark Total ImmersionSM method, you'll train at your own personal workstation in our instructional kitchen. Imagine yourself, dressed in your chef's whites, growing in skill and confidence as you prepare excellent Italian cuisine under the guidance of the same accomplished chef-instructors who teach our career students.

What You'll Learn

During this intensive 40-hour class, you’ll learn the proper techniques and get the authentic recipes to work with and prepare:

  • Fresh, dried, and filled pastas and their iconic sauces
  • Gnocchi and risotto
  • Grains and legumes
  • Pizza, calzones, and focaccia
  • Classic vegetable, meat, and seafood dishes
  • Antipasti
