Italy Abroad
Created by Dean and master Italian chef Cesare Casella, we offer the most authentic Italian studies programs in America. The programs begin in our state-of-the-art kitchens in New York or California and end in Italy—immersing you not only in Italian cuisine, but also in the language and culture. Our programs cover Italy’s 20 regions as thoroughly as they cover its diversity of flavors. We introduce you to everything from fundamental techniques to desserts and even wines.
Two programs, our 19-week Italian Culinary Experience or our one-week Italian Immersion, in partnership with Learning Journeys Powered by Perillo Tours, serve the needs of serious culinary students and food enthusiasts alike.
- Italy One-Week Program: Ten weeks in NY or CA followed by a weeklong cultural immersion in Italy that takes you through a gastro-centric journey of Italy’s beloved food regions. You’ll discover the tangibles of Italian cooking—the fundamentals, the ingredients, the language—and the intangibles—the passion and gioia per i prodotti alimentari, or joy for food, that makes Italian cuisine unique.
- Italy Intensive Program: This in-depth program features ten weeks of instruction in New York or California and a 19-week intensive in Italy that combine to create an unparalleled education in authentic Italian cuisine. Here you’ll learn first-hand from acclaimed Italian chefs at ALMA, the International School of Italian Cuisine led by Gualtiero Marchesi, the first-ever Italian chef to be awarded three Michelin® stars. You’ll progress from the classroom to your own stage restaurant—all the while absorbing the beauty, local culture, and indigenous ingredients that distinguish Italian cooking. Our Italy Intensive is for students who want to thrive and be transformed through the ultimate culinary experience.

Spanish Immersion
Designed under the direction of acclaimed chef José Andrés, our dean of Spanish cuisine and a multiple James Beard Award Winner who was named one of Time magazine’s Most Influential People in 2012, our Spanish Culinary Arts program is an extraordinary intensive that immerses you in Spanish culture to learn its traditional and avant-garde cuisine.
The curriculum, created in collaboration with Colman Andrews, author of Catalan Cuisine, includes ten weeks of instruction in NY followed by a weeklong immersion in Spain under the tutelage of master chef-instructors, putting you at the center of the vibrant and dynamic Spanish food scene.

French Intensives
Our six and nine-month career-building programs in classic culinary cuisine or classic pastry arts give students the essential skills and confidence to excel in their careers. Our study abroad programs in France, however, are where skill is transformed to passion, and where first-class experiences shape world-class chefs. Students spend seven-days in a cultural immersion in Lyon, France—created with Learning Journeys Powered by Perillo Tours— that takes them beyond the classroom’s four walls right to the heart of French culture to absorb the tastes, sights, sounds, and trends that give French cuisine worldwide appeal.
