Food Prep in FCI Cooking Courses

The International Culinary Center offers world-class cooking courses through both the French Culinary Institute as well as our new Italian Studies program.

For over 20 years, the French Culinary Institute in New York City has offered an innovative range of both professional and recreational cooking classes, centered around classic French cooking techniques. From career baking classes to continuing education cooking courses, the FCI provides students with in-depth culinary training and meaningful hands-on experience.

Recently introduced in 2006, our Italian Studies program was created with a mission to offer comprehensive and unparalleled culinary training in Italian cooking to chefs of all experience levels and career tracks. Cooking courses within our Italian Studies program range from the a la carte Essentials of Italian Cooking to the innovative Italian Culinary Experience, offering chef courses in both New York and Italy. Designed and overseen by world-renowned Master Chef Cesare Casella, the cooking courses within our Italian Studies program are a valuable and exciting addition to the curriculum at our culinary arts academy.

All of our cooking classes through the French Culinary Institute and our Italian Studies program are built on our revolutionary educational concept of Total ImmersionSM . COOKING CLASSES AT THE FCI

Career Programs through the FCI offer professional chef courses that provide a firm foundation in the essentials of French cuisine, accomplishing in months what other culinary arts colleges take years to teach. But these cooking and baking classes don't just teach you French cooking- they provide you with a complete background in the essentials of modern western cuisine. These accelerated chef courses include:

ITALIAN COOKING CLASSES

From risotto to calamari, our Italian Studies program offers an exciting blend of innovative culinary courses. For convenient a la carte options, choose one of our Essentials of Italian Cooking courses. For an continuous curriculum that covers all of the classic cuisines of Italy within one culinary course, choose the Fundamentals of Italian Cooking. Or, for an unparalleled exposure to the Italian culinary arts, choose the Italian Culinary Experience, a complete immersion in Italian culture that features training both at the International Culinary Center as well as at ALMA in Parma, Italy.
