Designed for wine aficionados looking to take their wine knowledge and tasting skills to the next level, Wineology, blends the immersive wine education of our Intensive Sommelier Training program, without the ‘intensity’ of training as a Certified Sommelier. With lessons, tastings, and instruction developed from our career program and taught by Master Sommeliers, ICC offers the most in-depth wine training available to the amateur, but passionate wine lover.

Module 3: New World Wines
In this 7-day evening course, you’ll discover the dichotomy between old-world and new-world sensibilities and how, with every vintage, that message becomes more complex! Travel to ‘traditional’ new world regions and the emerging markets – Canada and Mexico – and acclimate to the new world spirit of experimentation and curiosity. And, celebrate the wonderful resurgence of America as a wine-making nation as you learn while tasting 56 different wines.

*Each module begins with a class that covers basic viniculture, viticulture and deductive tasting.  If an enrollee has already taken this class, they can be reimbursed for the tools and Wine Atlas distributed on this day.

Module 2: Wines of Italy
For a country whose nationhood dates back only to the 1860s, Italy has come a long way in bringing order to their ancient legacy of wine-growing. To the wine student, it can be a daunting expedition into their 20 wine regions. In this 5-day evening course, you’ll taste 40 wines ranging from the historical, commercially-important hillsides – Piemonte, Toscana, the Veneto and more – to the underappreciated terroirs where opportunity awaits.

This comprehensive 11-day evening course, takes you through the vast and celebrated wine making regions of France, famous for making wine as fine as it is today. With an understanding of their appellation system – a codification of knowledge generated through a millennium – you’ll tour the wine regions of France, both big and small while tasting 80+ wines. We’ll present the challenges that face each region from a variety of perspectives and lift the veil to observe the controversies and differences of opinion amongst the vignerons themselves.

No wine education is complete without a focus on what the Greeks have done over the last 15 years. Food & Wine Pairing

Can a well-chosen wine really elevate the flavor of foods? What do “oaky,” “earthy” and “buttery” really mean, and what do these wines match best with? When confronted with a menu full of unfamiliar bottles, how do you choose the best pairing for a dish? These are just a few of the questions addressed in this intensive tasting class, which closely examines the complex and fascinating relationship between wine and food.

WHAT YOU’LL LEARN

After covering the basics of wine grapes, styles and descriptors, you’ll delve deep into flavor dynamics. By learning to identify a wine’s predominant notes—whether tannic, acidic or sweet—and experimenting with how they complement a range of food flavors (smoky, earthy and spicy, to name a few), you’ll move toward mastering fundamental pairing principles that will serve you well long after class is over.

Refine your palate, glass-by-glass, over these six sessions, and develop a well-rounded appreciation for the intricacies of food and wine pairings. Champagne and popcorn, anyone?

Fundamentals of Wine

Like any great field of study, wine appreciation is a life-long endeavor. It can start out intimidating and mysterious, but with structured guidance, a fascinating world of smell, taste and flavor – can awaken. In this intensive 3-day program, learn to taste and describe wine as we travel through commercially important wine regions of the world.

WHAT YOU’LL LEARN

We begin with the historical context of the great regions of Europe and taste benchmark examples of the classic styles – from sparkling to still, to fortified. We’ll make sense of how these wines came to be and their current relevance in the global wine market.

Not to be outdone, the regions we refer to as the New World, the Americas, the Antipodes and South Africa, have an equally compelling story to tell. We’ll taste the New Classics and draw comparisons to, and discern differences from, their Old World predecessors. In a global market, it’s the planet’s vineyards competing for market share!
